Cane Syrup Energy Balls

.

4 cups old fashioned oats

1 cup Steen’s Cane Syrup

1 cup peanut butter

1/4 cup mini chocolate chips

1/4 cup finely chopped nuts

1/4 cup finely chopped dried cranberries

In a food processor or blender, process the oats into a coarse oat flour. In a 2 qt bowl, add syrup and peanut butter. Microwave for 20 seconds. Remove and stir briskly to blend. Add oats and mix-ins and combine the dough with a fork. If adding chocolate chips, allow dough to cool before adding. With buttered palms, form balls with your hands, clenching firmly into ping pong (24) or golf ball (18) size. Place in a tin with waxed paper between layers. Yields 18-24 balls.

These treats pictures here were made with crunchy peanut butter, mini semi-sweet chocolate chips, Craisins and almonds. Other healthy mix-ins can be flax seeds, sunflowers seeds, pecans, carob chips, flaked coconut and other finely chopped dried fruits.
