It's fall, y'all.
While the rest of the country embraces the pumpkin as its iconic vegetable of fall, we want to shine the light on our “patate douce” or sweet potato.
Here in Louisiana, we love our beautiful root vegetable. We've been growing them commercially for nearly 100 years. Our sweet potato fields, stretching from northeastern to south central Louisiana, yield a whopping 20% of the country's sweet potato harvest.
Louisiana sweet potatoes are sometimes called yams, but they’re actually sweet potatoes. We have yam patties, yam fries, and a festival in Opelousas called the Yambilee. We’re never lean on a recipe using our “yams”.
Kicking off fall in a healthy way is this recipe for a Sweet Potato Smoothie. With just three ingredients and a bit of pumpkin pie spice, it’s like enjoying a pumpkin pie!
Sweet Potato Smoothie
3/4 cup baked and peeled sweet potato
3/4 cup unsweetened almond milk
2 Tbsp Steen’s Pure Cane Syrup
1/4 tsp pumpkin pie spice
In a blender, combine all ingredients with ice. Blend until thick and smooth. Pour into tall glass and garnish with a sprinkle of spice. Yields one 12 oz serving.
